    Turkey taquitoes

In a skillet with 1 tablespoon of vegetable oil, sauté the onion, garlic, and jalapeño. Remove from heat and transfer to a large bowl. Add the shredded turkey, cheese, and tomatoes to the bowl, and season with salt and pepper to taste. Mix the ingredients thoroughly.
  3. Microwave the tortillas for 10 seconds until soft and pliable.

  4. Heat 2 tablespoons of oil in a large skillet over high heat to 180°C (350°F). Add the taquitos to the hot oil in batches and fry until crisp, rotating them around the pan to ensure they're cooked through on all sides, about 3 minutes.
