Hot dogs with grilled chicken sausages and sweet potato fries

Ingredients:

    Potato

  • 2 medium sweet potatoes, peeled and cut into 0.5 cm thick strips.
  • 1/2 cup breadcrumbs
  • 1 tsp ground cumin
  • 1 teaspoon paprika
  • 1 tbsp. extra virgin olive oil
  • Coarse salt
  • 1 egg white

    Hot dog

  • 4 chicken sausages
  • 4 potato buns for hot dogs, make cuts lengthwise and fry
  • 2 tablespoons barbecue sauce, plus extra for serving
  • 2 ears of corn, husked
  • 1/4 cup chopped cucumbers, seeds removed
  • 1/4 cup chopped orange bell pepper
  • Juice of 1 lime
  • 1 teaspoon of sugar
  • Coarse salt
  • 2 tablespoons chopped basil
  • 1 tbsp. extra virgin olive oil

Preparation:

  1. Prepare French fries: Place the baking sheet in the oven and preheat to 220 degrees Celsius. In a small bowl, combine the breadcrumbs, cumin, paprika, olive oil, and 1 teaspoon of salt.
  2. In a medium bowl, beat the egg whites until foamy. Place the sweet potatoes in the bowl and coat thoroughly with the egg whites. Add the breadcrumb mixture and toss to combine.

    Place the potatoes in an even layer on a hot baking sheet and sprinkle the remaining breadcrumb mixture on top. Bake for 25 minutes, until the potatoes are tender and crispy.
  3. Meanwhile prepare hot dogs with chicken sausagesPreheat the grill to medium-high heat. Grill the corn for 6 minutes, turning occasionally, until lightly charred. Let it cool.

    Cut the kernels off the cobs and combine in a bowl with cucumbers, bell pepper, lime juice, sugar, and 1/4 teaspoon salt. Add basil and olive oil and toss to combine.
  4. Fry it chicken sausages Grill for 5 minutes, or until charred. Turn occasionally and brush with barbecue sauce. Place the sausages in buns and top with the corn mixture. Serve with sweet potato fries and barbecue sauce.
