White pizza with broccolini

Ingredients:

  • 3 tbsp. l. olive oil
  • 450 g ready-made pizza dough, room temperature (pizza dough recipe see here)
  • 230 gr. ricotta (about 1 tbsp.)
  • 2 tbsp. coarsely grated mozzarella
  • 1/2 tbsp. grated parmesan cheese
  • 1/4 cup grated Pecorino Romano cheese
  • A pinch of dried pepper flakes (optional)
  • Coarse salt and freshly ground pepper
  • 8 green onions, white and green parts separated, cut into rings
  • 1/4 cup chopped fresh herbs (such as mint, parsley, dill, etc.) basil)
  • 2 bunches broccolini, divided and coarsely chopped

Preparation:

  1. Place the baking sheet in the lower part of the oven and preheat to 250°C (450°F). Cover another baking sheet with parchment paper and grease it with 2 tablespoons of olive oil. Place the dough on the parchment paper, grease the top with olive oil, and cover with another sheet of parchment. Set aside.
  2. In a bowl, combine all the cheeses, pepper flakes, and salt and pepper to taste. In another bowl, combine the green onion parts and herbs. In a separate bowl, combine the broccolini, white onion parts, 1 tablespoon of olive oil, and salt and pepper to taste. Place the vegetables on a hot baking sheet and bake for 15 minutes.
  3. Form the dough into a flat rectangle measuring 30 x 40 cm. Season with salt and pepper, then transfer the dough, along with the parchment paper, to a hot baking sheet. Bake until golden brown, 6-8 minutes.
  4. Remove the crust from the oven and sprinkle with the cheese mixture, then top with the roasted vegetables and herbs. Return the pizza to the oven and continue baking until the cheese is melted, about 3 more minutes. Remove the pizza from the oven and drizzle with olive oil.
