Whoopie Pie Sandwich Cookies with Marshmallows

Ingredients:

  • 60 g chopped dark chocolate
  • 120 g chopped dark chocolate
  • 1/2 cup (110 g) unsalted butter
  • 1 cup of sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 3/4 tsp fine salt
  • 18 pcs. large marshmallows or marshmallows

Preparation:

  1. Preheat oven to 180 degrees Celsius. Line a baking sheet with parchment paper or use a silicone baking pan.

    Place the butter, dark chocolate, and semisweet chocolate in a bowl and microwave on high. Heat at 75% power until softened, about 2 minutes. Stir and heat until completely melted, about 2 minutes more. (Alternatively, you can prepare the mixture in a double boiler.)
  2. Beat sugar, eggs and vanilla into the chocolate mixture.

    In a separate bowl, sift together the flour, cocoa, baking powder, and salt. Gradually add the dry ingredients to the chocolate mixture and mix until smooth.

    Use a small spoon to drop the dough onto the prepared baking sheet. Make 36 cookies, spacing them about 2.5 cm apart. Bake for about 6 minutes.
  3. Cool the cookies slightly. Place half of the cookies on a wire rack. Turn the remaining cookies over so the flat side is facing up.

    Place 1 marshmallow on each cookie and return to the oven. Bake for about 3 minutes, until the marshmallows are softened. Cool the marshmallows slightly and top with the reserved cookie, pressing lightly. Cool completely. whoopie pie sandwich cookies on a wire rack and serve.
