Red Cabbage and Brussels Sprouts Salad

Ingredients:

  • 1/4 head red cabbage, shredded (approx. 5 cups)
  • 230 gr. Brussels sprouts, chop (approx. 2.5 cups)
  • 1/3 cup chopped chives
  • 1 sweet apple, with light orange skin and red spots (Celeste variety), cut into strips
  • 1/2 cup kefir
  • 3 tbsp white wine vinegar
  • 2 teaspoons olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

Preparation:

  1. Prepare the dressing in a salad bowl: Mix kefir with wine vinegar and olive oil.

    Add red cabbage, Brussels sprouts, chives, and apples. Season with salt and pepper and toss to combine.

    Cover and refrigerate for 1 hour. Season with salt and pepper to taste.
