- 3 red and/or yellow bell peppers, cut into long strips 0.5 cm wide.
- 1 large red onion, cut into large 0.5 cm half rings.
- 2 chopped garlic cloves
- 0.5 tbsp. barbecue sauce
- 0.25 cup chicken broth
- 0.25 cups brown sugar
- 1 tbsp mustard
- 1 tbsp. hot pepper sauce
- 12 pieces of cheese
Preparation:
- Cook the bacon in a 12-inch nonstick skillet over medium-high heat, stirring frequently, until crisp, about 6 minutes. Transfer to a paper towel-lined plate to drain.
- In the same skillet, fry the sausages in 2 batches over medium-high heat, stirring frequently, until crisp and golden, about 3 minutes. Transfer to a plate lined with paper towels to drain.
In the same skillet, cook the peppers and onion, stirring frequently, until softened, about 8 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds.
- Meanwhile, preheat the oven grill.
Add and stir together the barbecue sauce, chicken broth, brown sugar, mustard, and hot sauce. Bring to a boil, then reduce heat to medium. Cook, stirring frequently, until the sauce begins to thicken, about 1 minute. Add the sausages and continue cooking, stirring, for about 1 more minute. Remove from heat.
- If desired, toast the sandwich buns under the grill. Arrange the cheese slices on top of the toasted buns and toast for another 30 seconds until the cheese is melted. Top with the sausage mixture and sprinkle with bacon.
