Instant Pot Turkey Chili topcook.tomathouse.com
Ingredients:
- 500 g of ground turkey
- 800 g chopped baked canned tomatoes
- 400 g canned black beans, rinsed under water
- 1 tbsp. vegetable oil
- 2 tbsp tomato paste
- 2 tbsp. chili powder
- 1 tsp ground cumin
- 1 coarsely chopped green bell pepper
- 5 chopped green onions (white and green parts separated)
- Coarse salt
- 2 cups low-sodium chicken broth
- 1 cup crushed potato chips corn tortillas, and also for serving
- Sour cream and cheddar cheese, for serving (optional)
Preparation:
- In a large saucepan, heat the vegetable oil to medium-high heat. Add the tomato paste, chili powder, and cumin and cook, stirring, until the mixture darkens, about 1 minute.
Add 1/2 cup water, bell pepper, white parts of green onion, and 1 teaspoon salt. Cook, stirring, until bell pepper is half-cooked, about 4 minutes. Add ground turkey and cook for 4 minutes, breaking up the meat with a wooden spoon.
- Add the tomatoes, chicken broth, beans, and crushed corn tortillas to the pan; stir and bring to a boil. Cover and cook, stirring occasionally, until the mixture thickens, 10 to 12 minutes.
Stir in all but a few tablespoons of the chives and season with salt. Serve the chili topped with plenty of crushed corn tortilla chips, sour cream, cheddar, and the remaining chives.
