Sweet potato and banana puree topcook.tomathouse.com
Ingredients:
- 1.5 kg sweet potatoes, peeled and sliced
- 55 g butter
- 1 banana, sliced into rounds
- Juice and zest of 1 orange
- 1 tbsp. chicken broth
- 0.5 cup cane sugar
- 0.5 tsp ground nutmeg
Preparation:
- Boil the sweet potato, drain and set aside.
- Return the pan to medium heat. Add the oil and banana. Simmer the bananas for 5 minutes, then add the juice of 1 orange, setting the zest aside. Simmer the juice for 1 minute.
- Then return the sweet potatoes to the pan, add the broth and sugar. Mash everything thoroughly. Season with salt and pepper to taste, and add the nutmeg and zest. Mash the puree again and serve.
