Salad with beans and rice

Ingredients:

  • 1 can pinto beans
  • 4 plum-shaped tomato
  • 1 sweet pepper, cut into small cubes
  • 1 onion, chopped
  • 1/2 cup chopped red onion
  • 3 tbsp. l. olive oil
  • Juice of 1 orange
  • 1/2 tsp cayenne pepper
  • 1 teaspoon of salt
  • 2 tbsp. boiled rice
  • Chopped greens (cilantro, green onions)

Preparation:

  1. Soak red onion in cold water with ice for 10 minutes. Then drain and pat dry.

    Meanwhile, grate the tomatoes and place them in a salad bowl. Add olive oil, orange juice, cayenne pepper, bell pepper, onion, pinto beans, and a teaspoon of salt.

    Stir in rice and herbs. Season with salt and pepper.
