Ingredients:
- 2 cucumbers, thinly sliced
- Half a red onion, thinly sliced
- 1/4 cup white wine vinegar
- 0.5 tsp. mustard seeds
- 0.5 tsp sugar
- 3 cups shredded grilled chicken
- 1 tbsp. barbecue sauce
- 1 tbsp Dijon mustard + extra for greasing buns
- 8 sweets Hawaiian buns, cut horizontally in half
- Fresh coriander leaves, for serving
Preparation:
- Quick pickled cucumbers:
Combine cucumbers, red onion, vinegar, 1/4 cup water, mustard seeds, sugar, and 1/2 teaspoon each salt and black pepper in a bowl; stir and let sit for 30 minutes.
- Combine the shredded chicken, barbecue sauce, and mustard in a large skillet and heat over medium heat. Cook, stirring occasionally, until the chicken is heated through, about 4 minutes.
- Spread mustard on the cut sides of the buns, then spread the chicken mixture on the bottom halves. Top with a little cucumber mixture and cilantro, then top with the bun tops and serve.
