Burgers with shrimp cutlets and Old Bay mayonnaise

Ingredients:

    Shrimp cutlets

  • 450 g medium shrimp, peeled and deveined
  • 1/3 cup panko breadcrumbs
  • 1 tbsp lemon juice
  • 0.5 tsp coarse salt
  • 1/4 tsp garlic powder
  • 1/4 tsp freshly ground black pepper
  • 2 green onions, thinly sliced
  • 1 large egg, lightly beaten
  • 1/4 cup canola oil
  • 4 brioches, cut in half horizontally
  • Avocado slices, for assembly
  • Lettuce leaves, for assembly
  • Tomato slices, for assembly

    Mayonnaise sauce

  • 0.5 cup mayonnaise
  • 1 tsp - 1 tbsp Old Bay seasoning
  • Mix in a small bowl

Preparation:

  1. Shrimp cutlets:

    Coarsely chop half the shrimp. Place the remaining shrimp in a food processor and process until smooth. In a large bowl, combine both shrimp mixtures. panko breadcrumbs, lemon juice, salt, garlic powder, pepper, green onions, and egg. Refrigerate for 10 minutes, then form into 4 patties. Refrigerate for another 10 minutes.
  2. Heat oil in a large cast-iron skillet over medium heat. Fry the patties for about 3 minutes per side.
  3. Spread mayonnaise on the buns and place a patty on each. Top with avocado slices, lettuce leaves, and tomato slices.
