Glazed salmon with spicy carrots topcook.tomathouse.com
Ingredients:
- 4 portions (170 g each) of salmon fillet
- 2 tbsp. l. honey or agave nectar
- 1 tbsp Dijon mustard
- 450 g carrots, cut into thin slices
- 2 tbsp freshly squeezed lime juice, lime wedges for serving
- Coarse salt and freshly ground pepper
- 1/2 tsp ground coriander
- 1/4 tsp ground cumin
- A pinch of ground cinnamon
- 1/3 cup coarsely chopped fresh mint
- 1/4 cup sliced almonds
Preparation:
- Preheat oven to 220°C (425°F). Grease a baking dish with olive oil. Add the carrots and toss with 1 tablespoon of olive oil, then spread the oil over the entire surface of the dish. Bake until the carrots begin to soften, 2 to 3 minutes.
- Meanwhile, in a small bowl, combine 2 tablespoons olive oil, honey, mustard, and 1 tablespoon lime juice. Spread the glaze over the top and sides of the salmon. Place the fillets, skin-side down, next to the carrots and sprinkle with salt and pepper. Continue baking with the carrots for another 5-7 minutes, until golden brown.
- In a bowl, combine the remaining olive oil, lime juice, coriander, cumin, cinnamon, mint and almonds.
Add carrots and stir, add salt to taste.
Serve salmon with carrots and lime wedges.
