Banquet - Dutch almond cookies

Ingredients:

  • 2 cups premium flour
  • 1 cup cold butter
  • 0.5 cups of cold water
  • 1.5 cups almond paste
  • 2 eggs
  • 3/4 cup white sugar
  • 1/4 tsp almond extract
  • 1 pinch of salt
  • 1 egg white, beaten
  • Demerara sugar for sprinkling

Preparation:

  1. In a large bowl, cut the cold butter into the flour until crumbly. Make a well in the center and add cold water. Form the dough into a ball. Don't overwork it! Refrigerate the dough.
  2. Preheat oven to 230°C. Grease two baking sheets.
  3. In a medium bowl, combine almond mass, eggs, sugar, almond extract and salt.
  4. Divide the dough into 4 pieces and roll out 37 cm long strips. Place the filling down the center of each strip of dough. Roll the strips into a roll and press the edges to seal.
  5. Place the strips 5 cm apart on baking sheets. Brush with egg white and sprinkle with sugar.
  6. Bake for 15-20 minutes or until golden brown. Slice, cool, and enjoy!
