Ingredients:
- 1/4 red onion, thinly sliced
- 250 g frozen ravioli with cheese
- 1 tbsp. l. olive oil
- 1 tbsp lemon juice
- 1 clove garlic, grated
- 1/2 tsp lemon zest
- Salt and freshly ground pepper
- 1/2 cup halved cherry tomatoes
- 1/4 cup chopped olives
- Chopped parsley
Preparation:
- Pour cold water with ice over the onion and leave for 20 minutes, then drain the water.
- Meanwhile, boil the ravioli in plenty of salted water until tender. Drain in a colander and rinse under cold water.
- In a large salad bowl, combine olive oil, lemon juice, garlic, lemon zest, salt, and pepper to taste. Add the ravioli, onion, cherry tomatoes, olives, and a little parsley, and toss to combine.
