Slow Cooker BBQ Sausage and Beans topcook.tomathouse.com
Ingredients:
- 3 cups low-sodium chicken broth
- 1/3 cup tomato paste
- 1/3 cup brown sugar
- 3 tablespoons molasses
- 3 tablespoons honey mustard
- 2 tbsp. barbecue seasoning mixes
- 4 cloves garlic, chopped
- 450 g small-seeded white beans, rinsed and sorted
- 2 cloves
- 1 small onion, cut in half
- 680 g chicken sausages with apples, cut each in half lengthwise
- 2 tablespoons apple cider vinegar
- 1 tbsp Worcestershire sauce
- Pickled peppers, chopped shallots and/or sour cream, for garnish (optional)
Preparation:
- In a slow cooker, whisk together the broth, 3 cups water, tomato paste, brown sugar, molasses, mustard, barbecue seasoning mix, and garlic. Add the beans. Insert a clove into each onion halves, then place them in the slow cooker along with the sausages. Make sure they are covered with beans. Cover and cook on high until the beans are tender, about 6 hours.
- Remove the onion halves. Stir in the vinegar and Worcestershire sauce, then let the mixture sit, uncovered, for about 15 minutes. (The longer the beans sit, the more flavorful they will be.) Garnish with pickled peppers, shallots, and/or sour cream, if desired.
