Frozen Key Lime Pie

Ingredients:

    Cake

  • 1.5 cups crumbled graham crackers (10 crackers)
  • 1/4 cup sugar
  • 80 g melted butter

    Filling

  • 6 large egg yolks, room temperature
  • 1/4 cup sugar
  • 400 g of condensed milk with sugar
  • 2 tablespoons grated lime zest
  • 3/4 cup lime juice (4 - 5 limes)

    Decorating

  • 1 cup cold heavy cream 33%
  • 1/4 cup sugar
  • 1/4 tsp vanilla extract
  • Thin lime wedges

Preparation:

  1. Preheat oven to 175°C

    CakeMix in a bowl. graham crackers, sugar, and butter. Pour the crumb mixture into a 22cm pie pan and press it down to form a crust of even thickness on the bottom and sides. Bake for 10 minutes. Then cool completely.
  2. FillingIn the bowl of a stand mixer fitted with a paddle attachment, beat the egg yolks and sugar on high speed for 5 minutes, until the mixture thickens. Reduce the mixer speed to medium and pour in the condensed milk, lime zest, and lime juice. Pour the filling into the crust and place in the freezer.
  3. DecoratingIn the bowl of a stand mixer fitted with a whisk attachment, beat the heavy cream on high speed until soft peaks form. Add the sugar and vanilla and beat until stiff peaks form. Spoon the whipped cream over the pie using a spoon or pastry bag and garnish with lime wedges. Freeze for several hours or overnight.
