BBQ chicken

Ingredients:

    Chicken

  • 2 chickens (or 4 bone-in chicken breasts), cut in half lengthwise
  • 1.5 cups Italian dressing, recipe below
  • 1/4 tbsp. BBQ Seasoning, see recipe below.
  • 1 cup barbecue sauce, recipe below

    Italian dressing

  • 2 tbsp mustard powder
  • 2 cloves garlic, crushed
  • 1 tbsp crushed red pepper flakes
  • 0.5 tsp dried basil
  • 0.5 tsp dried oregano
  • 1 tbsp. sugar
  • 2 tbsp. l. bbq seasonings
  • 1/3 cup red wine vinegar
  • 1 cup of rapeseed oil

    BBQ Seasoning

  • 1.5 cups paprika
  • 3/4 cup sugar
  • 3 and 3/4 tbsp onion powder

    Barbecue sauce

  • 2 tbsp. ketchup
  • 1 cup of water
  • 0.5 cup apple cider vinegar
  • 5 tbsp. l. brown sugar
  • 5 tablespoons of sugar
  • 0.5 tbsp ground black pepper
  • 0.5 tbsp onion powder
  • 0.5 tbsp mustard powder
  • 1 tbsp lemon juice
  • 1 tbsp Worcestershire sauce

Preparation:

  1. Rinse the chicken halves in cool water and pat dry with paper towels. Place the chicken in a large bowl or baking dish, drizzle with Italian dressing, and sprinkle evenly with barbecue seasoning. It's best to marinate the chicken in the refrigerator overnight.
  2. If you bake chicken in the oven.

    Remove from the refrigerator and spread with barbecue sauce. Bake in a preheated oven at 175°C for 45 minutes.
  3. If you are grilling outdoors.

    Remove the chicken from the refrigerator and let it rest at room temperature for 30 minutes. Preheat the grill to medium, approximately 275°F (135°C). Hickory chips and charcoal are preferred.

    Place the chicken halves on the grill, flesh side down. Close the grill and roast the chicken for approximately 50 minutes.
  4. Then turn the chicken over and cook until golden brown, 15 to 20 minutes. The wings and legs should be tender and easily separated from the chicken. Brush the chicken with barbecue sauce and cook for another 5 minutes.

    This dish pairs well with a dark beer made from caramel barley malt.

    Italian dressingIn a bowl, combine all ingredients except the oil, salt, and pepper. Then, whisking, slowly pour in the oil, seasoning with salt and pepper to taste.

    BBQ SeasoningPlace all ingredients in a bowl and mix. The seasoning can be stored in a tightly sealed container for up to 6 months.

    Barbecue sauceCombine all ingredients in a large saucepan. Bring to a boil, reduce heat, and simmer, uncovered, stirring frequently, for 1 hour 15 minutes.
