Microwaved Beetroot with Greens and Goat Cheese topcook.tomathouse.com
Ingredients:
- 900 g of medium red beetroot with tops (about 8 pieces in total)
- 2 tbsp. l. olive oil
- 2 tablespoons white wine vinegar
- 1 bay leaf
- 60 gr. goat cheese
Preparation:
- Trim the beet greens and slice them thinly, you should have about 2 cups of greens. Set aside.
- Peel and cut the beets into pieces, making about 4 cups. Place the beets in a glass baking dish with the oil, vinegar, bay leaf, 1/3 cup water, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir. Cover with a lid with a vent or plastic wrap with 6 small holes. Microwave on high power for 5 minutes. Uncover and stir.
- Cover again and microwave, stirring the beets every 5 minutes, until tender, about 10 minutes more. Carefully uncover and add the greens and 1/4 teaspoon of salt. Cover again and microwave until the greens are softened, about 5 minutes more. Remove the bay leaf.
To serve, place the beets and herbs in a serving bowl and crumble the goat cheese over the top. Season lightly with black pepper and serve immediately.
