Mashed potato gratin

Preparation:

Cook 700g of peeled and diced potatoes with 1 sprig of rosemary and 2 crushed garlic cloves in salted water until soft, 15 minutes; drain and discard the rosemary.

Mash the potatoes with 0.5 cups of low-fat milk, 2 tablespoons of olive oil, the same amount of chopped parsley, salt and pepper. Transfer to a baking dish; sprinkle with grated Parmesan. Bake. mashed potato gratin until golden brown.
