Oatmeal and flaxseed cookies with chocolate

Ingredients:

  • 1.5 cups premium flour
  • 1 cup rolled oats
  • 1/4 cup flax seeds, finely ground in a coffee grinder
  • 1 teaspoon of baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 12 tbsp (180 g) butter, room temperature
  • 1 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Preparation:

  1. Preheat oven to 180°C. Line 2 baking sheets with parchment paper.
  2. In a bowl, mix flour, oats, flax seeds, baking soda, salt and cinnamon.
  3. In a large bowl, combine the butter, granulated sugar, and brown sugar and beat with a mixer on high speed for 4 minutes. While continuing to beat, add the eggs one at a time, then the vanilla extract. Reduce the speed to low, add the flour mixture, and beat until smooth. Stir in the chocolate chips.
  4. Place the dough onto the prepared baking sheets, spacing them approximately 5 cm apart, and use a tablespoon to shape the cookies. Place in the oven and bake until golden brown, 10-12 minutes. Remove the oatmeal-flaxseed cookies with chocolate from the oven and let them cool.
