Spicy Turkey Tostadas topcook.tomathouse.com
Ingredients:
- 1 package (approximately 450 g) of ground turkey breast, 1% fat
- 1 can (220 g) of tomato sauce
- 2 tablespoons lime juice
- 1 tbsp. chili powder
- 8 tostadas, 12 cm in diameter.
- 4 cups shredded cabbage or coleslaw mix
- 1 teaspoon peanut or olive oil
- 2 tbsp coarsely chopped cilantro
- 4 plum tomatoes (about 1 cup), diced
Preparation:
- Preheat oven to 160°C.
- In a medium skillet, combine ground turkey, tomato sauce, and ground chili pepper. Cook over medium heat, breaking up the ground turkey with a spoon, for about 5-7 minutes, or until the turkey registers 165°F (74°C) on a meat thermometer, or until the turkey is cooked through.
- Meanwhile, bake the tostadas in the oven until crisp, about 6 minutes.
- In a bowl, toss the cabbage with lime juice, oil, and cilantro. Spoon some of the meat mixture onto each tostada. Top with coleslaw and garnish with chopped tomatoes.
