Turkey Tostadas topcook.tomathouse.com
Ingredients:
- 8 tostadas (small crispy tortillas)
- 1 tsp chili-lime seasoning (lime zest, salt, and chili seasoning)
- 2 tbsp. l. olive oil
- 1 carrot, grated on a coarse grater
- 2 cloves garlic, finely chopped
- 450 g of ground turkey
- 2 tbsp tomato paste
- 2 tsp chili powder
- 1 tsp ground cumin
- 2/3 cup sour cream
- Shredded lettuce, diced tomato, sliced avocado, and grated cheddar for topping
Preparation:
- Preheat oven to 350°F (175°C). Place the tostadas on a rimmed baking sheet and bake until golden brown, about 5 minutes. Sprinkle with chili-lime seasoning while still warm; set aside.
- Heat olive oil in a large nonstick skillet over medium-high heat. Add carrots, garlic, and a pinch of salt and black pepper. Cook, stirring occasionally, until the carrots are golden brown, about 3 minutes.
- Add the turkey and cook, breaking up the ground meat with a wooden spoon, until no longer pink, about 5 minutes. Push everything to the sides of the pan and add the tomato paste, chili powder, and cumin to the center. Cook, stirring, until the paste darkens a shade, about 30 seconds, then stir in the turkey. Cook, stirring, for about 1 minute more. Add 1/4 cup water and cook until cooked through, about 1 minute. Remove from heat and season with salt and pepper.
- Spread sour cream on the tostadas, then add the turkey. Top with lettuce, tomatoes, avocado, and cheese.
Culinary note To add vegetables to a meat dish, add grated carrots to the ground meat, as we did here. Carrots can be added to meatballs, meatloaf, and Sloppy Joe sandwich filling.
