Ingredients:
Burgers:
- 350 g of sirloin steak mince
- 350 g of ground beef shoulder
- 220 g raw chorizo sausage, remove casings, crumble mince
- 1 tbsp adobo seasoning
- 1 large onion, grated
- 0.5 tbsp. breadcrumbs
- 2 tbsp. l. olive oil
- 2 large onions, very thinly sliced
- 1/2 cup pickled jalapeno rings, patted dry
- 0.5 cup dark brown sugar
- 2 medium canned roasted sweet peppers, patted dry
- 3/4 cup mayonnaise
- 6 slices Oaxaca cheese or mozzarella
- 6 hamburger buns
For the Delicious Adobo seasoning:
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 2 tbsp. l. dried oregano
- 2 tablespoons lemon pepper
- 2 tbsp. l. dried parsley
- 2 tablespoons annatto seed powder
- 1 tbsp cumin powder
Preparation:
- In a large bowl, mix the ground beef, chorizo, adobo seasoning, grated onion, and breadcrumbs together by hand. Form the meat mixture into 6 patties, being careful not to press them too hard, as this will make them tough. Line a baking sheet with waxed paper and arrange the patties in a single layer.
- Cover and refrigerate for at least 30 minutes.
Culinary adviceChilling will help the patties stay together when frying. If you make more patties than you need, simply line them with wax paper and place them in the freezer for frying another time.

- Make a caramelized onion and jalapeño relish:
Heat olive oil in a heavy-bottomed skillet over medium-low heat. Add the onion and season with salt and pepper. Add the jalapeño pepper and brown sugar. Sauté for 15 minutes or until the onion and chili are soft. Set aside.
- Prepare mayonnaise with sweet pepper:
