Watermelon Margarita on a Stick topcook.tomathouse.com
Ingredients:
- 1 small watermelon (about 2 kg), cut into 2.5 cm thick wedges.
- 200 ml white or silver tequila
- 0.5 cup lime juice + lime wedges for serving
- 0.5 cups light agave nectar
- Chili powder, for serving
- Special equipment: about 24 wooden popsicle sticks; 1 large zip-lock bag
Preparation:
- Pierce the rind of each watermelon slice with the tip of a knife to make a slit 0.5 cm wide and about 2.5 cm deep.
- Combine the tequila, lime juice, and agave nectar in a very large zip-lock plastic bag. Add the watermelon, seal the bag, and gently invert it to coat the watermelon evenly. Refrigerate for about 1 hour, inverting it once more.
- Line 2 baking sheets with waxed paper. Insert a popsicle stick into the crevice of each watermelon slice. Place on the prepared baking sheets and freeze until the flesh is firm, about 4 hours or overnight.
- Serve with lime wedges and sprinkle with chili powder.
