Falafel burgers

Ingredients:

  • 820 g canned chickpeas, pre-rinsed
  • 2 cloves garlic, finely chopped
  • 1/2 cup chopped cilantro
  • 3/4 cup breadcrumbs
  • 1 tsp ground cumin
  • 3 tablespoons of vegetable oil
  • 3/4 cup plain Greek yogurt
  • Coarse salt
  • 170 g of mixed lettuce
  • 2 tomatoes (1 finely chopped, 1 sliced)
  • 4 slices whole wheat sandwich bread, lightly toasted
  • 4 green onions (white and light green parts only), chopped
  • 1/3 cup canned cherry peppers or jalapeños and 2 tablespoons brine from the jar

Preparation:

  1. In a food processor, pulse the chickpeas, garlic, half each of the green onions, cilantro, and pickled pepper, breadcrumbs, and cumin for 3 minutes. Form into 4 thin patties, each 7.5 cm in diameter.
  2. Heat vegetable oil in a large nonstick skillet over medium-high heat. Add the patties and cook for 3-4 minutes until golden brown.
  3. Meanwhile, in a medium bowl, combine the yogurt with the pickled pepper brine and season with salt. In a large bowl, combine half the yogurt dressing with the leafy greens, chopped tomato, remaining green onion, and cilantro.
  4. Place the falafel burgers on the bread, top with tomato slices, the remaining yogurt dressing, and marinated peppers. Serve the burgers with a salad.
