Portioned casseroles with ham

Ingredients:

  • 20 large eggs
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp chili powder
  • 220 g thin slices of ham, cut into cubes
  • 1.5 tbsp. freshly grated cheddar
  • 1 large green bell pepper, finely diced
  • 1 large onion, finely diced

Preparation:

  1. Preheat oven to 350°F (175°C). Generously spray 24-cup muffin tins (2 standard muffin tins) with cooking spray.
  2. Crack the eggs into a bowl, add salt, black pepper, and chili powder. Beat until smooth. Add the ham, grated cheddar, bell pepper, and onion and mix.
  3. Using a measuring spoon, ladle the egg mixture into the casseroles. Bake for 20-22 minutes, until puffed and just set.
  4. After a minute or two, the casseroles will begin to shrink a little; this is normal! Run a knife around the edges of each mold and remove the casseroles from the molds. Serve warm or at room temperature.

    Note

    These casseroles are freeze-safe! Freeze them directly in the pan, then transfer them to zip-lock bags. Defrost and microwave before serving.
