Healthy peanut butter sandwiches with fresh berry jam

Ingredients:

  • 0.5 cup raspberries
  • 0.5 cup blueberries
  • 1 tbsp. chia seeds
  • 2 teaspoons of honey
  • 8 crispy puffed brown rice cakes
  • 4 tbsp. creamy peanut butter
  • Half a small Asian pear or Golden Delicious apple, cored and cut into 4 equal slices

Preparation:

  1. In a medium bowl, combine the raspberries, blueberries, chia seeds, 1 tablespoon of water, and honey. Mash with a potato masher or a fork until the mixture forms a chunky jam. Cover and refrigerate until the chia seeds plump up and the jam thickens slightly, about 30 minutes (the raspberry seeds will add a crunchy texture).
  2. Spread one rice cake with 1 tablespoon of peanut butter and top with 1/4 of the jam and a slice of pear. Top with another rice cake. Repeat to make 3 more sandwiches.
