Warm lobster sandwiches

Ingredients:

  • 0.5 kg. lobster meat
  • 5 tbsp (75 g) butter, divided
  • 0.5 cup celery, finely diced
  • 0.5 tsp chopped fresh dill + extra for serving
  • 0.5 tsp chopped fresh parsley
  • Juice of 1 lemon
  • 6 hot dog buns, split at the top

Preparation:

  1. Cut the lobster into large 2cm cubes. Heat 3 tbsp (45g) butter in a 25cm skillet over medium-high heat. Add the lobster, celery, 1 tsp salt, and 1/2 tsp pepper and cook, stirring, for 2-3 minutes, until heated through. Remove from heat, sprinkle the lobster with dill, parsley, and half the lemon juice. Stir well.
  2. Meanwhile, in a 12-inch (30 cm) skillet, heat the remaining 2 tablespoons (30 g) butter until shimmering. Place the buns in the skillet on their sides (you're toasting the outside, not the inside) and cook over medium heat for about 2 minutes per side, until golden brown.
  3. Place the buns cut-side up on a serving platter. Spread the lobster mixture evenly on each bun and sprinkle with dill, salt, and the remaining lemon juice. Serve the sandwiches immediately, while the filling is hot and the buns are crisp.
