Maine-Style Lobster Hot Dogs

Ingredients:

  • 2 lobsters (approximately 700 g each)
  • 1/3 cup mayonnaise
  • 1/4 cup diced celery
  • Juice and finely grated zest of 1 lemon
  • 4 hot dog buns, cut each one on one side
  • Celery leaves, for sprinkling

Preparation:

  1. Fill a saucepan with 2 inches of water. Add 1 tablespoon of sea salt and bring to a boil. Place the lobsters in the pan, cover, and simmer until the shells are bright red, 8 to 10 minutes. Remove the lobsters and rinse under cold water. Remove the meat from the shells and chop coarsely. Chill the meat in the freezer.
  2. In a bowl, combine mayonnaise, celery, lemon zest, and juice. Stir in the cooled lobster meat and season with salt to taste. Fill the buns with the mixture and sprinkle with celery leaves.
