Grilled Brussels Sprouts topcook.tomathouse.com
Ingredients:
- 0.5 kg Brussels sprouts, preferably all the same size (see Note)
- 2 tbsp. l. olive oil
- 1 tbsp. minced garlic
- 1 teaspoon dry mustard
- 1 teaspoon smoked paprika
- 1 teaspoon coarse salt
- 1/4 tsp ground black pepper
Preparation:
- Preheat grill to medium heat.
- Trim the stem ends of the Brussels sprouts and remove any yellowed outer leaves. Place the Brussels sprouts in a large microwave-safe bowl and microwave for 3 minutes. Add the olive oil, garlic, mustard, paprika, and salt and toss to coat. Let the sprouts cool enough to handle. Thread 4-5 Brussels sprouts onto each metal skewer, stem ends facing the same direction, leaving about 1 cm between each sprout.
- Place the skewers on the grill, stems facing the flame. Cover and grill for 5 minutes. Turn the skewers over and continue grilling for another 5 minutes. Serve the cabbage directly on the skewers, or for extra flavor, remove it from the skewers, place it in the first bowl, and toss with the remaining oil and garlic mixture. Serve.
NoteTo ensure even cooking of the cabbage, it is important that all heads of cabbage are approximately the same size and shape.
