Cabbage and sweet pepper salad topcook.tomathouse.com
Ingredients:
- 1/2 head of cabbage, shredded
- 6 bell peppers (red, orange and yellow), cut into thin strips
- 2 stalks celery, finely chopped
- Freshly ground pepper
- 3 tablespoons of sugar
- 2 teaspoons of salt
- 1/2 cup apple cider vinegar
- 1.5 teaspoons of celery seeds
- 1.5 tsp. mustard seeds
- 4 onions, chopped
- 3 tablespoons whole grain Dijon mustard
- 1/2 cup mayonnaise
Preparation:
- Stir sugar and salt into apple cider vinegar until completely dissolved. Add cabbage, celery seeds, mustard seeds, 1/2 teaspoon ground black pepper, bell pepper, celery, and green onions; stir.
Place in the refrigerator for 1 hour to allow the flavors to mix.
- Add Dijon mustard and mayonnaise; shake.
Place in the refrigerator to cool before serving.
