Banana bread with walnuts

Ingredients:

  • 1 and 1/4 cups flour
  • 1 teaspoon of baking soda
  • 0.5 tsp fine salt
  • 2 large eggs, room temperature
  • 0.5 tsp vanilla extract
  • 0.5 cups butter, room temperature + extra for greasing the pan
  • 1 cup of sugar
  • 3 very ripe bananas, peeled and mashed with a fork (about 1 cup)
  • 0.5 cups toasted walnut pieces

Preparation:

  1. Sift flour and salt into a medium bowl. Whisk eggs and vanilla in a measuring cup with a spout. Lightly grease a 22 x 12 x 7 cm loaf pan with butter. Preheat oven to 350°F (175°C).
  2. In the bowl of a stand mixer fitted with the paddle attachment or with an electric hand mixer, beat the butter and sugar until light and fluffy. Gradually beat in the egg mixture until fully incorporated. Add the bananas (the mixture will look curdled, but don't worry) and remove the bowl from the mixer.
  3. Using a rubber spatula, fold in the flour mixture until completely incorporated. Stir in the nuts and pour the batter into the prepared pan. Bake for 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool the loaf in the pan on a wire rack for 5 minutes. Remove the loaf from the pan and cool completely on a wire rack. Wrap in plastic wrap. This banana bread is best served the next day.

    Banana bread is easy to make. Just a few simple steps and it's irresistible. We recommend baking a few extra loaves, wrapping them in plastic wrap, and freezing them. Defrost them at room temperature for an hour, and by the time everyone wakes up, you'll have fresh banana bread for breakfast. You can also freeze individual slices.
