Strawberry Sabayon Cream

Ingredients:

  • 1 liter of strawberries, cut large berries into four pieces
  • 1 tbsp. sugar
  • 5 egg yolks
  • 1 egg white
  • 3 tablespoons of sugar
  • 1 tbsp red Marsala wine
  • 1/2 tsp vanilla powder
  • A pinch of salt

Preparation:

  1. Combine strawberries and 1 tablespoon sugar in a bowl.
  2. In a heatproof bowl, combine the egg yolks, egg whites, sugar, wine, vanilla extract, and a pinch of salt. Place the bowl over a pan of simmering water, whisking vigorously until the cream thickens, about 8 to 10 minutes.
  3. Arrange the strawberries among the bowls and drizzle with sabayon cream. Serve with biscotti cookies.
