Mashed potatoes with goat cheese and caramelized shallots

Ingredients:

  • 1 kg of whole potatoes
  • 110 g softened butter or 0.5 cup olive oil
  • 1.5 cups of yogurt
  • 1-2 tablespoons chopped chipotle peppers in adobo sauce
  • 1 cup crumbled goat cheese
  • 6 shallots, caramelized in olive oil

Preparation:

  1. Place the potatoes in a saucepan, cover with cold water, and add 2 tablespoons of coarse salt. Bring to a boil over medium-high heat and simmer, uncovered, until tender, about 45 minutes. Drain and cool the potatoes, then peel and transfer to a bowl.
  2. Add butter, yogurt, 2 teaspoons of salt, and pepper to taste to the potatoes; mash with a potato masher or fork. Stir in the chipotle peppers. Add the goat cheese. Transfer the mashed potatoes to a serving platter and sprinkle with caramelized shallots.
