White Bean and Smoked Bacon Dip

Ingredients:

  • 1 cup applewood-smoked bacon, thinly sliced
  • 1 can (400g) of canned white beans, drain and wash beans
  • 1 tbsp red wine vinegar
  • 1 tsp chopped shallots
  • 2 pinches of nutmeg
  • 3 anchovies
  • Juice and grated zest of 1 lemon
  • 1 clove of garlic
  • 2/3 cup olive oil
  • 0.5 cup fresh parsley, chopped

Preparation:

  1. In a small skillet over medium-low heat, fry the bacon, stirring regularly to prevent burning. Drain on paper towels, reserving the fat in the skillet.
  2. Place the bacon, white beans, vinegar, shallots, nutmeg, anchovies, lemon zest, juice, and garlic in a food processor and process until smooth. Season with salt and pepper. With the processor running, drizzle with olive oil and 1 tablespoon of the rendered bacon fat.
  3. Transfer the pasta to a serving bowl and stir in the parsley.
