Pork ribs baked in sweet and spicy sauce topcook.tomathouse.com
Ingredients:
- 1.3 kg pork ribs
- Juice of 1 lemon
- Coarse salt and freshly ground pepper
- 1/2 cup dark beer
- 4 tbsp (60 g) butter
- 8 cloves garlic, thinly sliced
- 1 tbsp ground chipotle pepper
- 1 cup sweet and hot chili sauce
- 2 tablespoons light brown sugar
- 1/3 tbsp. rice vinegar
Preparation:
- Preheat oven to 160°C (325°F). Trim sinew and membrane from the ribs. Drizzle the pork ribs with lemon juice, season with 1 teaspoon salt and 1/2 teaspoon pepper. Place the ribs, meat side up, in a baking dish and pour beer over them. Cover tightly with foil, place in the oven, and simmer until the meat begins to fall off the bones, about 1 hour.
- Meanwhile, prepare the sauce: Melt the butter in a saucepan, add the garlic and cook, stirring, until light golden brown, about 2 minutes. Add the ground pepper and continue cooking for another minute. Stir in the chili sauce, brown sugar, vinegar, and 1 cup of water and bring to a boil. Reduce the heat and simmer, stirring occasionally, until the sauce thickens and reduces by half, about 40 minutes.
- Remove the pan from the oven; increase the temperature to 200°C. Remove the foil and carefully drain the liquid. Add 1/4 cup of liquid to the sauce and stir. Pour the sauce over the ribs, return to the oven, and continue baking, uncovered, until golden brown, about 35 minutes.
- Place the ribs on a cutting board and cut into pieces. Return the ribs to the pan and toss with the sauce.
