No-Bake Fireworks Cheesecake topcook.tomathouse.com
Ingredients:
- One package (430g) of chocolate cake mix (plus other ingredients needed)
- 14 g unflavored powdered gelatin
- 450 g cream cheese, room temperature
- 1.5 cups powdered sugar
- 1/2 cup sour cream
- 1 tbsp vanilla extract
- Juice from 1 lemon
- A pinch of coarse salt
- 1 cup of milk
- Decoration: black, navy blue, lemon yellow, hot pink and orange gel food coloring
- Special device: a long wooden skewer and a springform cake pan
Preparation:
- Preheat oven to 350°F (177°C). Coat a 9-inch springform cake pan with cooking spray.
Make the dough. Bake it in the prepared pan, following the package directions for the size of pan you're using. Let the cake cool completely in the pan on a wire rack (about 1 hour).
- Meanwhile, combine gelatin with 1/4 cup water in a small microwave-safe bowl and set aside to bloom (about 5 minutes).
- Beat the cream cheese frosting on medium speed in the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl if using a hand mixer) until smooth, about 1 minute. Scrape down the sides of the bowl.
Add powdered sugar, sour cream, vanilla extract, lemon juice, salt and beat until combined and smooth (about 1 minute).
- Microwave the gelatin until dissolved, stirring as needed (about 30 seconds).
Add it to the cream cheese mixture and beat until combined (about 30 seconds). Transfer 1.5 cups of the mixture to a medium bowl. Pour the remaining batter into a springform pan over the crust. Refrigerate until slightly set (about 30 minutes).
- Pour the milk into the remaining batter. Divide 2 tablespoons of the mixture into 3 small bowls. Add black and dark blue food coloring to the remaining batter in the medium bowl. Stir until the color is uniform, like a dark night sky (about 1/4 teaspoon of each color). Divide 2 tablespoons of the resulting batter into a small bowl.
- Add yellow food coloring to one of the bowls with uncolored dough. Stir until the mixture is a uniform, bright yellow color. Add pink food coloring to the other uncolored dough. Stir until combined. The color should be bright pink. Repeat with orange food coloring and the last uncolored portion of dough. Stir until the mixture is a bright orange color.
- Pour the night sky-colored batter from a medium bowl over the cheesecake and spread into an even layer.
- For fireworksUsing a small spoon, make a small blot of brightly colored batter on the cheesecake. Then, drop a drop of dark sky-colored batter onto it. Top with more colored batter (it will spread, forming concentric circles as you add alternating shades).
- Repeat these steps with the dark and light colored dough until you have 4 or 5 concentric circles. Pull a long strip from the center of the circle outward to create the sparks of the "fireworks." Repeat with the remaining colored dough. Make "fireworks" of small and large diameters.
- Refrigerate the cheesecake until completely set (4 hours or overnight). Remove from the springform pan before serving.
