Grilled chicken wrapped in bacon on skewers

Ingredients:

  • 900 g chicken breast fillet, cut into 24 cubes (approximately 5 cm each)
  • 1 tbsp. l. olive oil
  • 1 tbsp red wine vinegar
  • 1 teaspoon chopped rosemary
  • 1 clove of garlic, grated
  • 1/4 tsp red chili flakes
  • A pinch of salt
  • 115g fontina cheese, cut into 24 cubes (about 2cm each)
  • 24 thin slices prosciutto (about 170 g)
  • 2 cups grape cherry tomatoes

Preparation:

  1. Preheat grill to medium-high heat and brush grates with vegetable oil.
  2. In a large bowl, toss the chicken with olive oil, vinegar, rosemary, garlic, red chili flakes, and salt. Place a cube of cheese on top of each chicken piece and wrap it tightly in a slice of prosciutto. Repeat with the remaining pieces.
  3. Thread the resulting rolls onto 8 25cm-long skewers, alternating them with tomatoes. Grill the skewers for about 10 minutes, with the grill lid closed, turning occasionally, until the prosciutto is crispy and the chicken is cooked through.
