Salad with green and white beans topcook.tomathouse.com
Ingredients:
- 1 can (425 g) white beans, drained and rinsed
- 1 small red onion, finely diced
- 1/4 cup apple cider vinegar
- 2 teaspoons of sugar
- 1/4 cup olive oil
- 350 g green and/or wax beans, trimmed and halved
- 2 tbsp finely chopped parsley
- 2 tbsp finely chopped chives
Preparation:
- Soak diced onion in water for 10 minutes.
- In a large salad bowl, whisk together the vinegar, sugar, and 0.5 teaspoon of salt, then stir in the olive oil. Drain the onions, pat dry, and add to the dressing. Stir in the white beans.
- Bring a pot of salted water to a boil. Add green and/or wax beans and cook for 4-5 minutes, until crisp-tender. Drain and plunge into ice water to stop the cooking. Drain again, pat dry, and add to the salad. Marinate at room temperature for about 1 hour, stirring occasionally.
- Before serving, stir in the parsley and chives and season with salt and pepper.
