Coconut Mojito

Ingredients:

    Mojito

  • 1 cup fresh mint leaves
  • 120 ml freshly squeezed lime juice
  • 120 ml sugar syrup, see recipe below
  • 480 ml coconut water, chilled
  • 250 ml white rum, chilled
  • Ice

    Sugar syrup

  • 1 cup granulated sugar

Preparation:

  1. Pour lime juice, sugar syrup, and mint leaves into a pitcher. Mash the mint to release its oils.
  2. Pour in coconut water and rum. Fill the pitcher with ice, stir, and refrigerate.

    Sugar syrupIn a medium saucepan, combine the sugar and 1 cup of water. Bring to a boil over medium-high heat. Cook, stirring, for 1 minute, until all the sugar has dissolved. Remove from heat and let the syrup cool completely.
