Potato salad with chipotle peppers

Ingredients:

  • 16 new potatoes, approximately 1.3–1.8 kg, boiled and cut into 1.5 cm thick slices.
  • 1.5 cups mayonnaise
  • 1/4 cup Dijon mustard
  • 2 tablespoons lime juice
  • 2 tablespoons pureed chipotle peppers
  • 1 large ripe tomato, diced
  • 1/4 cup chopped cilantro leaves
  • 3 green onions, chopped (white and green parts)
  • 1 medium red onion, thinly sliced ​​into half rings
  • 0.5 tsp cayenne pepper
  • 4 cloves garlic, finely chopped

Preparation:

  1. In a medium bowl, combine all ingredients except potatoes, season with salt and pepper to taste.
  2. Place the warm potatoes in a large salad bowl and pour over the prepared mayonnaise dressing and mix well. Season with salt and pepper to taste.
