Ingredients:
Cole Slow
- 1 head Napa cabbage (Chinese cabbage) or Savoy cabbage, shredded
- 4 carrots, grated
- 2 green Granny Smith apples, thinly sliced
- 1 medium red onion, thinly sliced into half rings
- 1 cup pecans, toasted and chopped
- 1 bunch mint, leaves only for garnish
Spicy Orange Dressing
- 1 tbsp Dijon mustard
- 1 tbsp. hot water
- 1/3 cup olive oil
- 1 teaspoon of sugar
- 0.5 tsp cayenne pepper
- 0.5 tsp ground cumin
- Juice of 1 orange
- 0.5 cup sour cream
Preparation:
- Place cabbage, carrots, apples, onions, and pecans in a large salad bowl. Mix thoroughly.
- In a small bowl, combine the mustard and water. Then whisk in the olive oil, sugar, cayenne pepper, cumin, orange juice, and sour cream. Taste and season with salt and pepper if needed.
- Pour the dressing over the coleslaw, toss well, and transfer to a serving dish. Garnish with mint leaves.
