Malted milk cookies

Ingredients:

  • 250 g butter
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 0.5 tbsp. malted milk powder
  • 2 cups premium flour
  • 1 and 1/4 teaspoons of baking soda
  • 1 and 1/4 teaspoons salt
  • One (340g) package of milk chocolate drops (chocolate chips)

Preparation:

  1. Beat the butter, then add both sugars and beat until fluffy. Add the eggs and lightly mix, then add the vanilla extract and beat until smooth. Add the malted milk and beat until fully combined.
  2. In a separate bowl, sift the flour, baking soda, and salt. Add the butter mixture and whisk gently until smooth. Add the chocolate chips and mix gently.
  3. Preheat oven to 190°C.

    Drop the dough by the teaspoonful onto an ungreased baking sheet, leaving plenty of space between the cookies (they will expand slightly during baking).
  4. Bake for 9-11 minutes; the cookies will be very flat and very chewy. Let them cool slightly before removing them from the baking sheet with a spatula.

    Sandwich cookies


    Let cool completely and use 2 cookies to make an ice cream sandwich. Add decorative sprinkles to the edges of the ice cream and wrap each sandwich individually in plastic wrap.
