Ingredients:
- Non-stick cooking spray
- 1 cup quick-cooking oats
- 1/2 cup raw sunflower seeds
- 1/2 cup toasted wheat germ
- 1/4 cup whole wheat pastry flour
- 1/2 cup dried apricots
- 1/2 cup raw almonds
- 1/2 cup raisins
- 1/2 cup dried pitted dates
- 1/2 tbsp. low-fat dry milk
- 1/2 tsp ground cinnamon
- 1/3 tbsp. pure maple syrup
- 2 large eggs
Preparation:
- Preheat oven to 180°C. Spray a 22 x 33 cm baking dish with cooking spray.
- Place all ingredients except the eggs and syrup in a food processor and blend well. Add the eggs and syrup and begin blending. The mixture will resemble a coarse paste.
- Transfer to a baking pan and spread evenly. Bake for about 20 minutes until set. Cut the mixture into 20 energy bars.
