Hot chocolate with homemade marshmallows topcook.tomathouse.com
Ingredients:
Hot chocolate
- 3/4 cup dry milk
- 1/2 tsp ground cinnamon
- 3/4 cup sugar
- 1/2 cup cocoa powder
- 110 g of dark chocolate
- Homemade marshmallows, see recipe below
Homemade marshmallows
- 3 tbsp (3 packets) dry gelatin
- 2 cups of cold water
- 2 tbsp. sugar
- 2 egg whites
- 2 cups sifted powdered sugar, plus powder for dusting the dishes and marshmallows
- Butter for greasing dishes
Preparation:
Hot chocolate Combine all dry ingredients in a large bowl and mix well. Chop the dark chocolate into large, evenly sized pieces. Mix all ingredients thoroughly with a wooden spoon and store in a dry, airtight container. To make cocoa, simply add 1 cup of water to 1/2 cup of the mixture. Heat in a small saucepan over low heat, stirring with a whisk. Simmer the hot chocolate for about 6-7 minutes, without bringing it to a boil. Serve with marshmallows.
Homemade marshmallows In a medium saucepan, dissolve the gelatin in cold water. After the gelatin has dissolved, about 10 minutes, add the sugar and gently dissolve over low heat for 8 minutes. Remove from heat and let cool to room temperature.
- Beat the egg whites with a mixer until stiff peaks form, then add the sifted powdered sugar. With the mixer running at low speed, slowly pour in the cooled gelatin solution. Increase the speed and beat until the mixture becomes thick and white, doubles in volume, and forms medium peaks.
- Line a 20x20cm baking dish with foil, lightly grease it, and dust it with powdered sugar. You can also use a baking sheet, but the marshmallows won't be as tall. Pour the mixture into the dish and dust with powdered sugar. Let it set overnight or for at least 3 hours until firm. The marshmallows should be light and airy when firm.
- Loosen the marshmallows from the sides of the pan and turn the pan out onto a large cutting board. Remove the foil and, using a large knife, cut the marshmallows into cubes. Roll each cube in powdered sugar.
