Chocolate Mousse Pie

Ingredients:

  • 1 sheet of chilled unleavened dough (see recipe below)
  • 2 cups chocolate chips or finely chopped dark chocolate
  • 1/2 cup whole milk
  • 1 tbsp chocolate cream liqueur
  • 1 tsp vanilla extract
  • 3 cups powdered sugar
  • 950 ml heavy cream
  • Chocolate chips, for sprinkling

Preparation:

  1. Preheat the oven to 180°C. Pour the unleavened dough into a 23cm diameter baking pan, spreading it evenly over the entire surface, including the sides. Then prick holes with a fork. Place the pan with the cake in the oven and bake for 11 minutes, until golden brown. Remove the cake from the oven and cool completely.
  2. Pour the chocolate into a saucepan, add the milk, and chocolate crème liqueur. Place the saucepan on the stove and heat on low, stirring, until the chocolate has melted and the mixture is smooth, about 1 minute. Then stir in the vanilla extract. Remove the chocolate sauce from the stove and cool completely.
  3. Beat powdered sugar and cream in a deep bowl with a mixer at high speed until fluffy and thick.
  4. Stir the whipped cream into the chocolate sauce, adding the cream in 1-cup increments. Then pour the mixture over the crust and sprinkle with chocolate chips. Cover the cake with plastic wrap and freeze for several hours.
