Peach Picker Cocktail

Ingredients:

  • 2 coarsely sliced ​​limes and lime wedges for garnish
  • 0.5 cup fine granulated sugar
  • 1 ripe peach, cut into large pieces, plus peach slices for garnish
  • 0.5 cup fresh mint
  • 450 ml light rum
  • Seltzer water as a filler

Preparation:

  1. In a large pitcher, combine the lime slices and sugar. Using a pestle or a large wooden spoon, mash the limes to release the juice.

    Add the peach pieces and mint and gently stir to lightly crush the mint and separate the peach pieces; stir in the rum. (The mixture can be refrigerated for up to 6 hours.)
  2. Just before serving, pour the mixture from the pitcher into glasses filled with ice and top with seltzer water. Garnish with peach slices.
