Coffee and milk flavored ice cream

Ingredients:

  • 4 large egg yolks
  • 3/4 cup sugar
  • 0.5 tsp salt
  • 2.5 cups whole milk
  • 0.5 tsp vanilla extract
  • 0.5 cups heavy cream
  • 0.5 cups whole coffee beans
  • Chocolate shavings for decoration

Preparation:

  1. In a medium bowl, whisk together the egg yolks, sugar, and salt until smooth. In a small saucepan, heat the milk over medium heat. When small bubbles appear around the edges, slowly pour half the warm milk into the yolk mixture, whisking constantly.

    Pour the mixture into the saucepan with the remaining hot milk and whisk. Cook over medium heat, stirring constantly with a rubber spatula, scraping the bottom, for about 5 minutes, or until the mixture thickens slightly and sticks to the spatula. Remove from heat and stir in the vanilla extract and cream.
  2. Pour the mixture into a clean bowl, passing it through a fine-mesh sieve. Cover the surface of the mixture with plastic wrap and refrigerate for about 4 hours. Once the mixture is cool, stir in the coffee beans and cover the surface with clean plastic wrap. Refrigerate for at least 12 hours or overnight.
  3. Prepare your ice cream maker according to the manufacturer's instructions. Strain the coffee grounds from the ice cream base. Pour the base into the prepared ice cream maker and freeze until the base has the texture of soft serve, about 10 minutes.

    Transfer the ice cream from the ice cream maker to an airtight container. Before sealing the container, line the surface of the ice cream with plastic wrap. Close the lid and freeze for another 2 hours before serving. Serve sprinkled with chocolate shavings.
