Classic turkey gravytopcook.tomathouse.comPreparation:Drain the turkey fat from the pan into a separate bowl. Pour a small amount of hot chicken broth into the pan and scrape up any browned bits of meat with a spatula. Then drain the fat into the bowl. Freeze until the fat hardens on the surface (or use a cooking jug to skim off the fat).Add 1/2 cup of fat and 1/2 cup of flour to a saucepan and sauté over medium heat, stirring, until golden brown, 4 minutes. Then slowly pour in 8 cups of hot chicken broth, stirring constantly; bring to a boil and adjust the heat. Remove the fat from the bowl and add the remaining fat to the gravy. Continue cooking, stirring, until thickened, for another 10 minutes. Season with salt and pepper. Strain the gravy, if desired. Ingredients: |
