Ingredients:
- 900 g of new white potatoes (large ones, cut in half)
- Salt
- Olive oil
- 8 slices bacon, cut into strips
- 1 onion, diced into 0.5 cm cubes
- 1/2 cup chicken broth
- 1/4 cup apple cider vinegar
- 1 bunch finely chopped fresh chives
Preparation:
- Place the potatoes in a medium saucepan, cover with plenty of water, and add plenty of salt. Bring the water to a boil, reduce the heat, and simmer until the potatoes are tender, about 20 minutes. Drain.
- Lightly coat a large, straight-sided skillet with olive oil. Stir in the bacon and place the skillet over medium heat. Once the bacon is browned and crispy, add the onion and cook until very soft and fragrant, 7-8 minutes.
Add the broth and apple cider vinegar. Stir in the potatoes while all ingredients are still warm and cook until the liquid is absorbed. Taste and add salt if needed. Stir in the chives and serve warm or at room temperature.
